Powdered sugar Palamatic Process

1. Main characteristics of sugar

Sugar is mainly sourced from sugar beet or sugar cane. It is a sucrose molecule made up of glucose and fructose. There several types of sugars: white sugar, crystal sugar, brown cane sugar, whole sugar, icing sugar, gelling sugar, pearl sugar, invert sugar, candy sugar, etc.

Sugar has a granular texture and its appearance is a white powder.

The most widely used simple sugars in the food industry are:

Dextrose, fructose, glucose, lactose, maltodextrin, maltose, glucose syrup, glucose-fructose syrup, sugar syrup, sucrose...

The bulk density of sugar is 0.57 - 0.83 kg / dm³.

 

2. Main applications of sugar

Sugar is an essential product in many industrially processed food products that we consume on a daily basis.

Directly obtained by crystallization of beet syrup, granulated sugar is often intended for professional or industrial uses in the production of biscuits as well as candies and cakes.

Simple sugars such as sucrose (white sugar), dextrose or glucose-fructose syrup are widely used in the food industry for their lower cost and specific properties. This especially in manufacturing processes of beverages like sodas, flavored waters, lemonades, fruit drinks, syrups, etc.

Indispensable in providing a desirable texture of sorbets and sweets, it contributes to the crispness of cookies and provides a support for the crystallization of cocoa in chocolate production. It is also a fermentation agent for leavened doughs or wine. It acts as a preservative for jams and candied fruits because it helps trap moisture. In products that have been the subject of a cooking phase, it enhances color and aroma generally through caramelization reactions.

3. Industrial handling of sugar

Sugar is an ingredient involved in many industrial production lines.

Sugar is one of the powders whose combustible dust (particles smaller than 500 µm) suspended in the atmosphere can cause explosions.

The equipment used during industrial sugar handling must therefore be suitable for an ATEX / NEC environment.
 

Also, powdered sugar being hygroscopic, flow problems may occur during the different handling phases.
Vibration, extraction and flow aid solutions are therefore sometimes necessary.

 

4. Sugar applications with Palamatic Process equipment

Storage, pneumatic transfer, dosing and packaging of powdered sugar in bags or bulk bags are common operations in sugar production processes.

Grinding sugar to obtain icing sugar is a common application in industrial production lines. Icing sugar is obtained by finely grinding white granulated sugar and adding starch as an anti-caking agent, which gives it its almost impalpable consistency. Instantly soluble in water, it is often used to make cake icings to decorate desserts or to accompany waffles.

Sugar grinding unit
The installation consists of supplying the granulator with granulated sugar and then conditioning the icing sugar to get rid of the formation of lumps.

Bagging powdered sugar
The installation allows the packaging of many different raw materials (grain size and density) and is configurable with its acceptance module.

Silo loading
A container tipper allows the supply of the pneumatic transfer circuit for the supply of 2 silos of 50 tons.
