1. Main characteristics of instant coffee

Coffee powder is obtained by roasting the coffee seeds that come from the coffee tree shrub. Then the seeds are ground to obtain the coffee powder. The size of the grind determines the quality of the drink. Coffee is known for its antioxidant and anti-inflammatory properties; it also contains polyphenols and magnesium.

The coffee powder takes the form of a fine, free-flowing brown powder. It is easily soluble in water or milk. The grain size of the coffee powder is >1.5mm.

Coffee powder is mainly used in the food industry  and particularly in:

• The confectionery industry (candies)

• The pastry industry (ganache, cakes)

• The prepared meals industry (creams, ice creams, sauces, mousses)

Beverages (instant coffee, coffee beans, ground coffee, coffee liqueur, flavored coffees, syrups, sodas, etc.)

3. Industrial coffee handling

The aroma of coffee is very volatile. This is why it is important to use appropriate handling and storage methods in order to retain its flavor profile. Ground coffee loses its flavors more quickly than beans, it is best not to store it for too long to avoid oxidation.

It must therefore be stored away from light and humidity in large burlap bags, flexible silos, or IBCs for better conservation.

Coffee is generally received in the form of beans by suppliers. The objective of the production line will then be to grind these beans from coarse to fine grades, in order to obtain ground coffee ready for consumption. The grain size is generally reduced step by step to ensure optimal aromatics and freshness. The coffee powder will then be packaged in the form of small sachets or capsules using packaging equipment with a weighing system.
